Flint Corn (Zea mays var. indurata)

Flint corn has kernels consisting mostly of hard starch and often have a glasslike appearance. Most older landraces in Europe and northeastern North America are flint corn. Used for making cornmeal (e.g. for polenta or cornbread), or to make hominy and tortillas.
